For almost twenty years, the name Gallone has been synonymous with respect for tradition and careful attention to quality.
In Puglia, to the south of Le Murge, nestled between the Salento and Valle d'Itria, you find the Gallone Oil Mill, collecting only the olives that have reached perfect ripeness. After being cultivated in full adherence to biodiversity and organic farming, the olives are processed with methods that are completely carbon neutral thanks to biodynamic energy production cycles. It is precisely for this reason that our production can boast both a (Protected Denomination of Origin) DOP Colline di Brindisi extra virgin olive oil and an ICEA certified (Ethical and Environmental Certification Institute) extra virgin organic olive oil.
A true protector of precious traditions, here at Gallone we offer our customers several varieties of extra virgin olive oil, which are dedicated to discerning palates that demand the real flavours of authentic food and wine culture.
Today Gallone is a modern oil mill in the heart of the Villa Castelli countryside and possesses all the latest machinery for production in line with new technologies, but is always respectful to tradition.
Our photovoltaic system holds pride of place, which meets all our energy needs with natural electric energy. It is an extra detail that adds value and offers our customers informed consumption of extra virgin olive oil. -

Olive pit
The olive pit is a residual product produced in mills when making olive oil: thanks to separating machinery and a mechanical process, the pit can be separated from the virgin pomace oil.
